Ingredients
- 4 boneless and skinless Chicken Breasts, halved and then cut into thin pieces
- 1 package Uncooked Linguine Pasta
- 1 1/4 cups Chicken broth
- 1/2 pound fresh shiitake mushrooms, stemmed and sliced
- 5 tsp white Sugar
- 3 tbsp Rice Wine Vinegar
- 1/2 cup Soy sauce
- 1 cup Water
- 1 tbsp Sesame oil
- 1/2 tsp Ground Black Pepper
- 2 tbsp Cornstarch
- 2 tbsp Vegetable oil, divided
- 2 tbsp fresh thinly chopped Ginger root
- 6 green onions, sliced
- 1 tbsp minced Garlic
Procedure:
- Combine the chicken with 2 1/2 tsp of white sugar, 1 1/2 tbsp vinegar and 1/4 cup soy sauce in a medium bowl.
- Coat the chicken well with this mixture. Cover and let marinate in the refrigerator for at least 1 hour.
- Mix the chicken broth, water, sesame oil and ground black pepper with the remaining sugar, vinegar and soy sauce in another bowl.
- Dissolve the cornstarch with a little of above mixture in a small bowl. Slowly add this to the bulk of the mixture, stirring well and set aside.
- Cook the pasta according to package directions, drain and set aside.
- Heat 1 tbsp of the vegetable oil in a large saucepan at high heat until it starts to smoke.
- Stir-fry the chicken in it for 4 to 5 minutes until browned.
- Transfer this and all juices to a warm plate.
- Heat the remaining vegetable oil in the pan at high heat.
- Put ginger, garlic, mushrooms and green onions, and stir-fry them for 30 seconds.
- Now, add the sauce mixture and then the chicken in it.
- Simmer this until the sauce begins to thicken for about 2 minutes.
- Add the reserved noodles and toss gently, coating everything well with the sauce.
