Pani Puri is a popular Snack dish.. mostly popular as street foods in India, Nepal ...and other South-Asian countries. But popularity of Pani Puri has striked the European and American streets as well.
Pani Puri are a little tricky, and not so easy dish to make as it has 3 components Pani( Spiced Pani puri water ), Puri( Puffed small chapatis) and fillings. But it's still a fun dish to make. Here's how we make Pani Puri.

Ingredients:

  • To make Puri
    • 1 cup Semolina ( also called Suji)
    • 1 tbsp plain flour
    • Salt 1/2 tsp
  • To make pani( Spicy Pani Puri Water)
    • Water ( 3 cups)
    • Fresh mint leaves (1 Cup)
    • Coriander leaves (1/2 Cup)
    • 4 or 5 green chilli to taste
    • 1 tsp Ginger paste
    • 1/2  tsp Chili powder
    • 2 tbsp Tamarind pulp
    • 1 tsp black salt
    • 1 tsp Cumin powder
    • 1 tsp Chat Masala Powder
    • Salt to taste
  • To make fillings:
    • Boiled and mashed potatoes(1 Cup)
    • 1 tsp chili powder
    • Salt to taste
    • Chat Masala Powder
    • Bean sprouts( Salted)
    • Chopped onions
    • Green Chili
Procedure:
  • To make Puri
    • Add salt to the semolina in a flour.
    • Add a little luke warm water and plain flour in it to make a stiff dough. The dough should be nicely Kneaded for about 5 minutes.
    • Let the dough stand for 15-20 minutes.
    • Then roll out the dough into very thin sheets(as much as possible) and cut into 1 1/2 diameter round circular shapes(Use mouth of Steel glass or anything preferable)
    • Deep fry them in a mediium flame, let them puff on nicely and become reddish brown in colour

    • Let them cool  and Store in a airtight container.
  • To make Pani
    • Grind mint leaves, coriander Leaves, Ginger and green chilies in a Grinder to make a fine paste.
    • Mix the above paste with the rest ingredients.
    • Adjust the flavors as  per your taste.
    • Refrigerate the mixture for cooling.
  • To make Pani Puri fillings
    • Add the filling ingredients to mashed potatoes and mix well in a separate bowl.
Well, Now all of pani puri components are cooked and ready to be served.
  • How to serve/eat pani puri
    • Tap the puffed puri at the top with your thumb to make a small hole to let some fillings fit in.
    • Put the fillings inside the Puri as much as you want (but don't fill the whole puri inside, let some space for the Pani (spicy water).
    • Now stir the Pani(So that spices dont settle down in the bowl) once fill the puri with it and put the whole in your mouth at once.. and you're done makinf and eating these lovely pani puris.
