The key to prepare a delighting Fried Scallops lies on the sense of timing of your cooking. You need to heat the oil to one particular temperature, which will give you beautiful looking Scallops while cooking. You can have these as a side dish to your dinner too.

- 1 lb Scallops (Cut into medium pieces, do not cut them if they are small scallops)
- 2 Eggs
- 1 cup Breadcrumbs
- Vegetable oil, for deep frying
- 1/2 tsp Salt
Procedure:
- Wash the scallops in cold water and drain them using paper towels
- Add salt to the breadcrumbs and mix in a bowl and Beat the eggs well in another bowl.
- Roll scallops in breadcrumbs, then dip in egg and roll them back in the breadcrumbs. Breadcrumbs should be evenly spread on the scallops.
- Deep fry these scallops for 2-3 minutes, until golden brown. They should be white in the middle.
- Drain on paper towels for a while before serving.
- Serve with lemon and ketchup.
