Jalebi Recipe

Jalebi RecipeJalebi (also called Jeri) is a very popular Persian sweet in Indian sub continents like India, Nepal, Bagladesh and Pakistan. It is basically made by deep frying batter in pretzel shapes and then soaking them in syrup. 

The recipe might not be a very hard one, but requires a lot of attention while giving proper shapes to your Jalebi.


Here is one simple Jalebi Recipe.



Ingredients:
  • 2 cups Plain Flour
  • 1 1/2 tbsp Gram Flour
  • 2 tbsp Yogurt
  • 3 cups Sugar
  • 5-6 Cardamom seeds powdered
  • 1/4 tbsp Baking Powder
  • 10-12 Saffron strands
  • Refined oil (for deep frying)
  • 1 1/4 cup Warm water
  • 2 1/2 cups Cold Water
  • 1/2 tbsp Rose water
Procedure:
  • Put the plain flour in a large bowl and mix gram flour in it well.
  • Add yogurt and some water, and mix thoroughly to make a liquid mixture ( Make sure that there are no lumps formed).
  • Mixture should have a medium consistency (neither too thin nor to thick)
  • Add Baking soda in it and mix well.
  • Pour this prepared batter into a Ketchup bottle or a Jalebi Bottle( So that you can pour the batter into oil making perfect pretzel like shapes)
  • Next step is to prepare sugar syrup, add Sugar into warm water and dissolve the sugar. Now heat the mixture until it becomes a little consistent ( little bit sticky)
  • When the consistency is reached add saffron and cardamom powder and stir quickly.
  • Heat oil in a medium low heat in a deep frying pan.
  • Now pour the batter through the bottle into heated oil, and try to make batter like shapes or more or less concentric circles.
  • Deep fry the Jalebi until it looks Crispy and Golden. (Don't let it overcook)
  • Take the Jalebi out of the Oil, drain excess oil.
  • Immerse these Jalebis into the sugar syrup for 4-5 minutes so that the syrup is saoked up.
  • Take these Jalebis out and they are ready to be served. (Tastes better when served hot)
