Ingredients

 - 1 1/2 cups Brown rice, medium sized grain
 - 2 1/2 cups Water
 - 1 tbsp Butter
 - 1 tsp Kosher Salt
 - Other Ingredients:
 - 6 Bacon slices
 - 1/2 cup Chicken Broth
 - 1/2 cup white Wine vinegar
 - 1/2 cup diced Red Onion
 - 1 tsp Sugar
 - 1 tsp Kosher Salt
 - 2 tsp Dijon mustard
 - 1/2 tsp freshly ground black pepper
 - 1 tbsp chopped fresh Dill
 
Procedure:
- Procedure to Bake Brown Rice:
 - Preheat the oven to 375 degrees F.
 - Put brown rice into an 8-inch square glass baking dish.
 - Boil water, butter and oil in a kettle and pour it over the rice.
 - Stir it so that it combines, and cover the dish tightly with heavy-duty aluminum foil.
 - Bake on the middle rack of the oven for 1 hour.
 - Remove cover and fluff the rice with a fork and rice will be ready to be served.
 
- Fry the bacon in a medium saucepan until crisp.
 - Drain the bacon, crumble and set aside. Reserve 1 tbsp of bacon fat from the pan.
 - Cook red onion in the same pan until translucent which should take around 5-6 minutes.
 - Put vinegar, mustard, chicken broth, sugar, salt, and pepper in the pan and Stir.
 - Now add the crumbled bacon to the pan again along with the baked rice and cook, stirring occasionally, until the liquid is absorbed. This should take approximately 7 to 10 minutes.
 - Stir the dill in and remove the heat.
 - Allow to cool slightly before serving. Serve with fresh herbs on the top.
