Ingredients
  • Ingredients for Brown Rice baking:
    • 1 1/2 cups Brown rice, medium sized grain
    • 2 1/2 cups Water
    • 1 tbsp Butter
    • 1 tsp Kosher Salt
  • Other Ingredients:
    • 6 Bacon slices
    • 1/2 cup Chicken Broth
    • 1/2 cup white Wine vinegar
    • 1/2 cup diced Red Onion
    • 1 tsp Sugar
    • 1 tsp Kosher Salt
    • 2 tsp Dijon mustard
    • 1/2 tsp freshly ground black pepper
    • 1 tbsp chopped fresh Dill
Procedure:
  • Procedure to Bake Brown Rice:
    • Preheat the oven to 375 degrees F.
    • Put brown rice into an 8-inch square glass baking dish.
    • Boil water, butter and oil in a kettle and pour it over the rice.
    • Stir it so that it combines, and cover the dish tightly with heavy-duty aluminum foil.
    • Bake on the middle rack of the oven for 1 hour.
    • Remove cover and fluff the rice with a fork and rice will be ready to be served.
  • Fry the bacon in a medium saucepan until crisp.
  • Drain the bacon, crumble and set aside. Reserve 1 tbsp of bacon fat from the pan.
  • Cook red onion in the same pan until translucent which should take around 5-6 minutes.
  • Put vinegar, mustard, chicken broth, sugar, salt, and pepper in the pan and Stir.
  • Now add the crumbled bacon to the pan again along with the baked rice and cook, stirring occasionally, until the liquid is absorbed. This should take approximately 7 to 10 minutes.
  • Stir the dill in and remove the heat.
  • Allow to cool slightly before serving. Serve with fresh herbs on the top.
