Ingredients:
- 2 Chicken Breast, halved, boneless and skinless and cut into bite-size pieces
- 2 cloves Garlic, minced
- 3 tbsp Curry Powder
- 1 tsp Ground cinnamon
- 1 Onion, chopped
- 1/2 tsp fresh Ginger root, grated
- 1 tbsp Tomato Paste
- 1 tsp Paprika
- 1 Bay leaf
- 1 cup Plain Yogurt
- 3 tbsp Olive Oil
- 3/4 cup Coconut Milk
- 1/2 tsp Cayenne pepper
- Lemon juice, from freshly squeezed lemon half
- 1/2 tsp White sugar
- Salt to taste
Procedure:
- Heat Olive oil in a skillet.
- Sauté onion in it until golden brown.
- Add garlic, cinnamon, curry powder, paprika, ginger, bay leaf, sugar and salt and stir them for 2 minutes.
- Put Chicken pieces, yogurt, tomato paste and coconut milk in it and bring to boil.
- Reduce heat, and simmer for 20 to 25 minutes.
- Remove bay leaf and add lemon juice and cayenne pepper in it and simmer for 5 more minutes.
- Your Indian Chicken Curry is ready to be served.
